In 2021, Trisha Tietje and her daughter Alaris McCord embarked on a venture to start a coffee shop in Blooming Prairie, Minnesota, naming it Boujee Bagels and Coffee. Tietje, who had prior experience managing a Pizza Ranch, and McCord, a former employee at Rounders in Mankato, aimed to fill the void in their small town by introducing a business that could bring the community together. They chose a location previously occupied by a Subway that closed during COVID-19. Their vision was to offer a space that not only served coffee and bagels but also promoted local unity and supported the growth of small businesses in the area. McCord emphasized the importance of small businesses in fostering a unique community vibe, which she believed was lacking in Blooming Prairie compared to nearby towns like Mankato.
