Fondry Bakery Lights Up Highland Park with Artisan Croissants

AJ Kim and Scott Sohn, founders of popular coffee shops Kumquat and Loquat, have opened a new bakery called Fondry in Highland Park, specializing in croissants. The bakery launched on April 20, 2024, and quickly sold out of its offerings like pain au chocolat and kouign amann within 90 minutes over the first two days. Partnering with Ivy Ku, a Le Cordon Bleu-trained baker, and Travis Chan, Fondry serves a variety of croissants meticulously crafted from specially formulated flours and a precise cold fermentation process. The bakery, which currently operates on weekends, aims to expand to daily operations, reinforcing its commitment to quality and community integration amidst the local gentrification concerns.
