A Helsinki-based artisan roastery has teamed up with a local AI consultancy to create an innovative coffee blend using artificial intelligence. Named "AI-conic," this blend combines beans from Brazil, Colombia, Ethiopia, and Guatemala, tailored to enhance flavor profiles using AI algorithms similar to those in ChatGPT and Copilot. The AI not only selected the bean mixture but also designed the packaging and provided a detailed taste description. The project aims to explore how AI can assist in traditional coffee roasting, reducing workload and introducing new taste experiences. The successful trial at the Helsinki Coffee Festival has opened discussions on the future role of AI in coffee roasting, blending technology with traditional artisan techniques.
