Crafting the Red Fruits Beans
The Colombia CM Red Fruits undergoes an intricate carbonic maceration process that sets it apart. Freshly picked cherries are soaked in water before a 72-hour carbonic maceration with mossto begins, enhancing its depth and sweetness. This is followed by another 72-hour parchment maceration with red fruits and wine yeast, infusing the beans with vibrant complexity. Finally, the coffee is sun-dried over 25 days, ensuring every detail contributes to its extraordinary quality. This elaborate process has resulted in a coffee that is both richly layered and balanced, praised by evaluators for its well-structured finish and clean character.
A delightfully fruity and approachable cup with layers of complexity, the CM Red Fruits offers vibrant notes of fresh strawberry, bubble gum, and even a hint of berry cereal. Evaluated as espresso, it dazzled co-taster John DiRuocco (95) with its lavish sweetness and clean structure, while Ken (92) appreciated its musk and sandalwood undertones despite finding the sweetness slightly intense. Both tasters agreed the coffee excelled in three parts milk, where its sweetness and fruitiness softened into a rounded and harmonious experience.
